At rhubarb we love food and everything about it so are always seeking out the hottest restaurants, latest trends, exciting new venues and meeting old industry friends and we’d love to share what we’ve got going on this month…
JR, our Head of Creative headed up to Birmingham this month to visit renowned chef Brad Carter’s restaurant, Carters of Moseley. rhubarb were fortunate enough to work together with Carter last year on a fabulous charity event and we couldn’t wait to sample more of his culinary delights.
Carters of Moseley is a Michelin-starred restaurant where great British ingredients really come alive. The menus reflect and complement the changes in season, using overlooked heritage ingredients and modern cooking techniques to unlock new textures and flavours.
Highlights of the meal included native oyster cooked in beef fat, nestled on a bed of sea salt, followed by candied kohlrabi, delicately pickled leaves of baby coriander and sourdough bread served in individual hessian bags made from flour from the local mill and served with hand whipped butter.
Next up was a meltingly fresh raw scallop served with Exmoor caviar, followed by roe deer served pink and cooked to perfection with pumpkin purée and seeds. All dishes were beautifully presented and served on stunning reactive plates and bowls which got the JR seal of approval.
The seven course lunch ended with coffee, brewed by hand at the table with a choice of fine single estate beans, making it as much about the dining experience as the food itself.
